Hello!

I was driving my 2007 grand caravan sxt on a lower gear then usual yesterday in snowy below freezing temp, and while driving the electric in the car (radio clock, dashboard lights, etc.) blinked off for a moment then cut back on, the second time it happened the gauges on the dashboard spazzed out too, then it went back to normal. Any thoughts on what could be causing this? Thanks.

Electrical problem are common on the 4th gens. Typical culprits are:

Loose/corroded connections to fuse box/IPM in engine bay..
Poor ground connection under battery tray.
Poor/oxidized battery harness terminations.
Poor/dirty connection to battery terminals.
Failing Battery.

Do some searches for flickering/fluttering dash lights or electrical problems on this site and you should find lots of information as well as others with similar problems.

check the little red cable coming off of the big positive cable on your battery to make sure it's secured

cold makes things shrink, it might not be making good contact anymore

mine was loose for a moment and i got no interior electrics

My negative battery terminal was loose! Should of checked under the hood before posting haha, Thanks!!!
