Every once in a while (like every couple of months) my security camera catches a light coming on in my van in the middle of the night. Anybody have any idea what's going on here?

Looks like a windshield reflection to me. Also, keep in mind cameras may be sensitive to light frequencies, like infrared nor near-infrared, that your human eye can't see.
It's hard to tell if it's more reflections, or just automatic exposure/gain control in the camera, but other elements, like the outside door pane, and in one instance the steering wheel, become much more visible, while in the other instance they don't.
Sometimes I'm in the garage and the dash screen will light up when I walk by even if I don't have the keys on me. Never figured it out, but I figured the passive entry is a bit sensitive and eager. Maybe moisture on the door handle is enough to make it do some sort of quick wake-up?
There's a firmware update to fix issues with the radio coming on or not shutting off. The proximity sensor should only trigger action if it senses the correctly coded transmission from the key.
